From Petit Chablis to Grand Cru Les Clos, the Dauvissat lineage elevates its mastery of Chardonnay to the rank of art. In its old 17th century cellars, the Dauvissat family produces Chablis which have won over many fans around the world.
René, then Vincent, from 1976, and now Gislain and Étiennette, since 2013, form a family serving terroirs and great wines. In a spirit of continuity, the estate has nevertheless made substantial progress in terms of vine management, under the leadership of Vincent. Without having certification, he has worked in "organic" and biodynamics since 2002: "A personal approach, I am not looking for an official label", explains Vincent Dauvissat, who knows that everything is at stake in the vineyard.
In the cellar, no magic recipe, aging in barrels (10% new wood), no stirring, very low doses of sulfur for a very convincing result. Unfortunately, most of the estate's wines will be drunk far too early and it is no longer possible to purchase any at the estate.

Tasting: Juicy yellow fruits and Mirabelle plums complement the acidity of the vintage's citrus fruits. Lush, full texture, golden, sunny fruit with energy and vitality on the finish. The soils here are deeper and more clayey than in the Sechet plot, which gives more open and more voluptuous wines. |
