The domain
Since 2006, three first names have carried the name of He will die. Laurence and her two children, Clémence and Arnaud, are in turn writing new pages in the history of the estate; with a deep attachment to the roots that have built it since 1956 and also with a wind of freedom to chart the future.
For Arnaud, the vineyard and the wine are two heritages shaped both by Burgundy and by his family. This is why, in the vineyard or in the cellar, each of his choices responds to a need for authenticity. Each decision is carefully considered to respect the past and translate it as best as possible into the wines of today.
Arnaud : "Today, I can say that we are working for 50% organically and for 50% in a reasoned way, particularly during the flowering period but with infinitesimal doses. I will take just one example: we adapt the doses of treatments in relation to the leaf area. If I have disease pressure on only 20% of the leaf area, only 20% of the registered rate is used. You can't imagine what a product discount that means!"

Tasting: Very complex, persistent and deep, it takes time to reveal itself. When it is ready, everything is there: tight and velvety texture, ripe and racy fruit, with notes of liquorice, almost endless finish. |
