Salon is a unique champagne. Everything in this exceptional wine is placed under the sign of one: originally, champagne of one man, Aimé Salon, of a single terroir, the Côte des Blancs, of a single vintage, Le Mesnil-sur-Oger, from a single grape variety, Chardonnay, from a single year, that of a great vintage.
With a first vintage in 1905, Salon champagne is the creation of a man, a lover of champagne and completely seduced by the Mesnil terroir. Following an unwavering requirement, Aimé Salon, a singular personality, knew how to invent the champagne of his desires: an unprecedented Blanc de blancs, initially made for his personal pleasure, he only shared his creation with the world from the 1920s.
This champagne comes from the 1 hectare plot, "le Jardin Salon", and 19 other small plots in Mesnil-sur-Oger, selected by Aimé Salon at the beginning of the 20th century. The wines are kept in the cellar for an average of ten years before revealing their complexity and finesse.

The Vintage: The year 2004 is late in Champagne, and even in Mesnil-sur-Oger, the legendary terroir of the Côte des Blancs, where the sugar-acid balance is perfect. However, slowness does not prevent an overflow of grapes. In July, the decision was made to "harvest in green", for better concentration of the fruit. In a cool, rainy month of August, the grapes struggled to ripen. Finally, on September 2, the sun is out. Glorious, efficient, it brings an abundant, but controlled harvest, at an unexpected rate of maturity accompanied by remarkable acidity until September 23, the start of autumn and the harvest. It is an explosion of the concentrated forces of the vine. An eruption of the quality hoped for, expected, was prepared for a year under the earth, in the vines, soil, wind, rain, sun combined: a champagne like a volcano, waiting, giving, in all serenity, like by surprise, its true nature, the 2004 vintage of Salon. |
