Brunello di Montalcino - Salvioni La Cerbaiola 1998
The domain
Surrounded by woods, the 20 hectares of the La Cerbaiola farmhouse dominate the Val d'Orcia from the top of 420 m above sea level, opening up like a plateau with a slight slope towards the south-east, 4 km from Montalcino . The air is clear and on the hills opposite you can see Pienza, San Quirico and Ripa d'Orcia. There are three parcels of vines, for a total of 4 hectares, each with particular characteristics: soils that change from marly limestone to stone; and microclimate with subtle but significant differences that affect grape ripening times. All the work in the vineyard is carried out in the traditional way, with short pruning to obtain very low yields, from 25 to 35 quintals per hectare, and strictly manual selective harvesting. Current production varies between 10,000 bottles in years when only Brunello is produced and 15,000 when Rosso di Montalcino is also produced.
