Pessac-Léognan - Domaine de Chevalier 2015

The domain

Owned by the Bernard family since 1983, the magnificent Domaine de Chevalier is at the top of the greatest Crus Classés of Bordeaux. Located in a green setting south of Bordeaux, the estate is an essential reference among the great wines of Pessac-Léognan.

Domaine de Chevalier watches over a rare vineyard with 45 hectares of vines dedicated to red wine. The vineyard is made up of vines aged 30 years on average and is based on a gravel terroir with clay-gravelly subsoils.

The manual harvest in crates is carried out by successive sorting depending on the maturity of the grapes. A rigorous sorting is carried out in the vineyard then in the cellar before and after destemming. Vinification is carried out on a plot-by-plot basis in small tulip vats, thus ensuring optimal extraction. The wine is aged in barrels (1/3 of which are new wood) for a period of 16 to 18 months, accompanied by regular stirring during the first 4 months.
